CHEAP FOOD TIP: a great cheap and delicious
#salad that gets better as time goes on ...
cabbage shredded or cut into slices (2-3 cups)
any other greens
any herbs
apple cider vinegar I tbsp
any oil 2-3 tbsp
any mayo (kewpie if possible) 1 tbsp
optional adds:
shredded carrots
any other crunchy veg aging in your fridge shredded
salt and lots of pepper
chilis or poblano or other peppers to spice it up
red onions
frozen peas (cooked)
frozen corn (cooked)
pickle the onions quickly in the vinegar (15 - 20 mins)
mix it all in a big bowl and let it sit in the fridge for flavours to mix, gets better day 2 or 3, add more cabbage to extend it
to make it a meal:
add any protein (scrambled or fried or boiled egg, shredded turkey or chicken, tinned tuna or salmon, fish, ground beef)
also good w sardines but don't mix them in
add it to anything for crunch, freshness and healthy flavour ❤️🔥 sandwiches burgers pizza pasta or as a side
tip: to make most aging crunchy vegetables crispier soak them in cold water for an hour.
